Apu's car is a 1981 second generation Pontiac Firebird with T-tops, in red with a gold Firebird hood decal. A Pontiac Trans Am with 403 engine.
It was first seen in the "Bad Neighbors", Apu is washing his car. He is later seen in another episode dating several Springfield women whilst driving it on dates.

For legal reasons, in The Simpsons: Hit & Run[1], Apu's car is known as the Longhorn, and instead of red, its color was orange. The body work was redsigned from a fast back coupe to a notch back style roadster, a cattle skull replaces the iconic "Screaming Chicken" Trans Am eagle on the hood, most likely for copyright reasons.
